5 Years of Blogging

I cannot believe it's been 5 years since I sat down to write my first blog post. My life has changed drastically since that summer afternoon five years ago, and it's been exciting sharing it with you all! I started my blog to help anyone who was feeling down about their diet, especially teens who had been recently diagnosed with Celiac or those who needed to switch to a gluten-free diet. I realized how important a positive outlook was, because when I was diagnosed with Celiac as a kid, I had to come to terms pretty quickly with the fact that I was going to have it for the rest of my life.
It required me to plan ahead a bit more and learn how to take matters in my own hand when someone didn't quite understand the diet. But that being said, it's made me look into what I was eating, thus introducing me to a healthier lifestyle! Having to read the ingredients on most items really makes you realize what's going into the products, and that enables you to sometimes make more of a conscious effort to eat healthier (although I do love indulging in an ~unhealthy snack~).
Having a positive attitude starts with enjoying the food you're eating. My goal is to make sure that you find new options to eat, and can enjoy your diet even when you have a busy lifestyle. I'm currently a college student, which means I'm always running from class to work to activities, and I still make sure I find delicious recipes or products to help fuel my busy days!
